To Saute and Grind
Heat 1 tspn of oil in a medium flame and saute Coriander Seeds, Fenugreek Seeds, Urad Dal, Chana Dal , Cumin Seeds and Dry red Chillies till nice aroma comes out. Then add in Garlic and Small Onion and saute well.Then add in Coconut and saute for 5 Minutes. Then add in cubed tomatoes and saute well till it becomes mushy.
Transfer to a jar and Grind well to a smooth paste.
To Make Gravy
Slit Brinjals to four section and immerse in water till you add in gravy to prevent discolouration.Heat a kadai with 6 tspn oil and add mustard seeds and when it splutters add in Garlic, Small onion and Curry leaves and saute well. Then dry the brinjals in a colander and saute the brinjals well in the oil.
After when the brinjals gets cooked in oil add in the grinded paste, Turmeric powder, Chilly Powder , Sambar powder, Salt and Saute well with the Brinjals
After when it is sauted well add required water and cover and cook for 10 Minutes.
Add in the tamarind water and cook till oil oozes out from the gravy.Finally add in the Pepper powder and switch off the stove and Garnish with coriander leaves.
Gravy is ready to be served with rice,Dosa or Idly,roti,naan.![DSC_0055-600x400.jpg]imp note remember always ..................Do not stir too much as it will break brinjals.
