soup with lentils, spinach and coconut
An Italian tradition says that by eating lentils on the first day of the year, you will be rich all year round. I do not derogate from this family tradition and offers you a delicious lentil soup flavored with coconut milk. What a good start to the year! For this soup recipe, I used green lentils from the Soy brand .

ingredients
1 onion
1 clove of garlic
3 carrots
660 g of cooked green lentils SOY
40 cl canned coconut milk
200 g fresh spinach leaves
Olive oil
Preparation
- Peel and finely slice the onion. Peel and crush the garlic.
- Peel and cut the carrots into slices.
- Fry the onion in a pan with a drizzle of oil, add the carrots, garlic, coconut milk and lentils. Cook for 15 to 20 minutes.
- Add the spinach and continue cooking for 5 minutes. Serve hot.
