Ingredients
1 cup wheat flour
1/4 cup semolina/rava
1 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup grated jaggery
1/3 cup vegetable oil
1 teaspoon vanilla essence
1 cup warm milk
A pinch of cardamom powder
Method
Sieve the flour and the dry ingredients together. Grind the jaggery for a few seconds till there are no lumps. Add the oil and grind once more. Now add the essence and half the amount of milk and blend well. Pour this into a bowl. Add the flour mix and fold it well. Add the remaining of the milk slowly and the cardamom powder too and mix till it falls in ribbon consistency.
Wheat flour tends to thicken the cake, so do make sure the cake batter is not leaning towards the thick side. If you like, you can add tutti fruity, candied ginger, dry fruits/nuts or the like.
You can bake it in a cooker or oven. The oven temperatures vary, so please do choose your own timings.
You can easily slice a layer and soak it with sugar water if it is too dry but do it after it cools down completely.
