For the pourover bewing method, my go-to is the Chemex 8-cup Glass Handle -- hands down. The Chemex grants the most consistent and purest brew, with variable batch sizes. I usually shoot for about 2 cup servings for myself. When sharing, simply increase the recipe (see below). If you prefer this rustic look, go for it.
I've considered adding a reusable filter for the Chemex, but still use the classic square folded kind.
Prepare for your Pour
- Heat water to 203 F (95C)
- Grind 50g of coffee med-course
- 15:1 ratio of water and coffee. Adjust to taste, depending on the bean.
Step-by-step Guide
- Rinse Chemex Carafe with hot water
- Fold Chemex filter and fit into the top of the carafe. Make sure that the 3-ply side of the filter is where the spout is
- Wet Filter with hot water. Discard water from the carafe.
- Add ground coffee. Tare scale.
- Add 100g of water, watch bloom. Ensure that all grounds are immersed.
- Pour to desired ratio (15 or 16g water for 1g of coffee)
- Keep water 1in below the top of the carafe.
- For 50g of coffee, you’ll need 750g of water.
- Wait a couple minutes and enjoy!
