OVERVIEW
White soup is a Nigerian soup delicacy. It's assumed to be white since it has no oil added to it. In the Southern part of Nigeria where it is predominant, it is called "Afia Efere" (Efik Language). In the Eastern part of Nigeria, it is called "Ofe Nsala"(Igbo Language).
MAJOR INGREDIENTS
- Salt
- Water
- Ground Crayfish
- Pounded Yam
- Pepper
- Meat (Preferably Goat Meat and/or Chicken)
- Stockfish
- Seasoning (Magi Seasoning Cube)
- Ogiri *(Optional)
PREPARATION PROCEDURE
- Boil the meat, or chicken with the intestines for 15minutes.
- Put a cup of water in a pot, add salt, pepper, crayfish and stockfish to your taste and cook for at least 15minutes then add together with meat.
- Then put the pounded yam or yam powder. Thicken to your taste.
- Stir and add the shredded Utazi leaf and cook for 3 minutes more. This is optional.
- Add seasoning to your taste.
- Serve with Starch (pounded yam or fufu preferably)
