POTATO AND CARROT SOUP
2 T oil 2 cloves garlic crushed
1 onion chopped 2tsp ground cumin
1tsp ground coriander 4 carrots chopped
750G potatoes peeled and chopped
4 cups vegetable stock
125ml cream
sour cream and coriander leaves to garnish
Fry garlic and onions until soft. Add cumin coriander and half tsp salt and cook for another minute. Add the carrot and potato and toss to coat. Add the stock and bring to the boil. Reduce heat and simmer for 20 mins. Puree and stir in the cream and coriander
