Cloudberry fruits are golden-yellow, soft, juicy, and resemble the raspberry in shape. When eaten fresh, cloudberries have a distinctive tart flavor and when over-ripe, they are sweet and have a creamy texture somewhat like yogurt. They are often made into jams, juices, and pastries. Cloudberries are rich in vitamin C, are a natural source of benzoic acid and will not ferment, the fruit can remain fresh for many months without preservation. Cloudberry fruits grow on small perennials that spread readily by a creeping rootlike stem. Native to the Arctic and subarctic regions of the north temperate zone. The plant spreads by two means, the seeds are spread by birds and mammals and its rhizomes develop into wide berry patches. Despite great demand as a delicacy (particularly in Russia, Norway, Sweden and Finland) the cloudberry is not widely cultivated. It is mainly a wild plant.
