Russian Holodets is a cold meat jelly, traditionally made for the holiday table. This Russian Holodets recipe is made with slow cooked pork meat. Holodets is eaten cold out of the refrigerator, and spread with horseradish or mustard. This dish’s name “holodets” is from the Russian word “holod” means “cold”. It’s very simple to cook and so delicious!
Ingredients
2 pork knuckles or ears
250-500 gr of pork cut ( use fattier version)
1 onion
1 carrot
1 celery
Few peppercorns
3-4 garlic cloves
2-3 bayleaf
salt
Directions
Step 1: In a large pot, add pork knuckles with pork cuts, add water and slow cook for 2 hours.
Step 2 : Take off the heat, discard everything and wash the meat. Then add new water.
Step 3 : Add onion, carrot, celery, peppercorns, bayleaf, salt and garlic. Simmer the meat with vegetables for 1 hour or so.
Step 4 : Once cooked, take out all the vegetables, but leave carrots. Then discard everything else except the meat.
Step 5 : Take your meat, and using your hands break the meat into small pieces. Chop your carrots into small pieces. You can use any plates to make these. To layer them, add carrots, then meat and then stock. Leave in the fridge until they set completely.
Step 6 : Gently move it and take it out of the form, serve with salad, mustard or horseradish. Enjoy!
