Just a few weeks ago, I started doing something similar to your first photo with hands behind the back. I find that it's helping with my posture. Thank you for posting inspirational images, and I would recommend you focus on all that you CAN eat as a vegan, and not what you "can't." For supplementing, I recommend Ben & Jerry's ice cream, Soylent Green, Lenny & Larry's cookies, and Red Star nutritional yeast.
An idea: You could involve/challenge other people who follow you on here in a plank challenge...
