It is another marvelous day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
We made a delicious feast for our full time volunteers today on our indoor wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen. We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!
Today we made a delicious spread with Mexican lasagna, cilantro lime quinoa, sautéed veggies, and fresh raw salad!
We made our Mexican lasagna a few days ago, and it was such a big hit with our crowd that we decided to make it again! We have all the ingredients in great abundance, and we can do whatever we want, so we made a whole feast just to celebrate it once more! We'll share the recipe for our delicious Mexican lasagna with you tomorrow!
We started the feast with a bright garden salad. This has chopped onions, colorful sliced bell peppers, chopped garlic, orange cherry tomatoes, and cilantro on a bed of greens. You can almost taste the healthy phytonutrients just by enjoying the bright colors! :)
This is our awesome Mexican lasagna. It has layers of corn tortillas, cheese, and tomatoey spiced chicken, and is super yummy! We make a big dutch oven of it so everyone can eat as much as they want.
We made a side of sautéed mushrooms, onions, bell peppers, and yellow squash to get even more vitamins and minerals in our tasty meal.
We rounded it out with a delicious cilantro lime quinoa, packed with great flavor and healthy protein!
We served creamy sour cream along with red and green salsas for each person to dress up their dishes as they wanted.
Another epic sustainable feast with more than enough food for everyone!
It was a really great Mexican flavored feast with fully sustainable delicacies! We enjoyed it in great company and gave thanks for another fabulous day in this wonderful life.

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!
