Hi... I'm Amaranth! And you may not like me, yet I am much good for your health!...
Yes, my dear Friends.... You may find these leaves, not so tasty... But the amount of Iron, calcium and other vitamins we get on eating these leaves, will certainly do a good difference in our health!.
It's always good to include green vegetables twice or thrice a week in our food, which helps us to get most of the vitamins and minerals, our body needs.
But these leafy veggies we get may not be liked so much by our family because of their weird taste!
We can make a good side dishes with these leaves and I want to share the recipes here which can make you feel much hungry, for sure!
This dish goes good with Chapathies or Parathas.... :)
Amaranth Upkari (We call this Amaranth as Harive Dantu in our local language)
We need....
Amaranth leaves - 2 bunches.
Onion - 1 big.
Oil - 1 table spoon.
Mustard seeds 1tea spoon
Cummin and Coriander powder - 1tea spoon each.
Tomato - 1small.
Coconut powder - 1table spoon.
Garam masala powder 1/2 tea spoon.
Method of prepation.
Clean, wash, cut and then keep the Amaranth leaves and stems separately like this.
Take a pan, pour the oil and mustard and then add chopped onion, fry till golden brown. Now add the stem pieces of Amaranth first, as it takes more time to cook.
When this is half cooked, add the chopped leaves, above mentioned powders, tomato pieces and salt for taste and a little water. Keep covered with occasional stirring. The mouth watering side dish is ready to eat with your hot Roties or Chapathies or Parathas!!
This is as easy as my yesterday's dish, made from mushrooms. But here I have added Garam Masala instead of chilli powder to bring a better taste to these leaves... :)
