I prepared a recipe for you for pizza you have never eaten before. This is 100% plant-based and gluten free pizza!
Ingredients:
- 3/4 cup of millet (I use organic)
- natural tofu cube (180 - 200 g)
- 1 zucchini
- 1 green capsicium
- 1 red onion
- 2 cloves of garlic
- several dried tomatoes
- optional: a few mushrooms
- fresh basil leaves
- coconut oil refined for frying
- olive oil
Tomato sauce:
- 2 large ripe tomatoes
- 1/2 teaspoon of cane sugar
- a pinch of Himalayan salt
- a teaspoon of Provencal herbs
For millet:
- a tablespoon of freshly ground linseed (I used golden flax)
- a pinch of turmeric
- 1/4 teaspoon of Himalayan salt
Spices for vegetables:
- Herbes de Provence
- sweet pepper powder
- hot pepper powder
- Himalayan salt
- pepper
Spices for tofu:
- turmeric powder
- smoked pepper powder
Preparation:
1. Boil the millet:
Pour the millet into a pot and roast for a few minutes while stirring. Then rinse with water. Pour the water, add salt and turmeric, boil. Reduce heat to low and let simmer for 20 minutes under cover (without stirring), until the millet absorb all the liquid. Leave under cover for a slight cooling (until it is warm, not hot).
2. Prepare tomato sauce:
Peel the tomatoes and cut into small pieces. Throw in a pot and cook on a small gas, stirring occasionally until the juice evaporates completely. At the end, add a pinch of salt, sugar and herbs, mix.
3. Prepare vegetables and tofu:
Cut the zucchini, capsicium, dried tomatoes, mushrooms and onions, and squeeze the garlic through the press. Fry the vegetables in olive oil for about 15 minutes.
Tofu cut into slices. Sprinkle turmeric and smoked paprika on a plate, roll each slice of tofu in spices. Heat the coconut oil in a frying pan and fry tofu slices in golden color on both sides.
4. Prepare the bottom for the pizza:
Add a tablespoon of ground linseed to the cooked and slightly cooled millet. Blend with a hand-held blender.
Put the paper on the baking tray. Place the blended millet on paper and cover with another piece of paper. Roll out the dough to a thickness of 0.5 - 1 cm. Remove the paper from the dough and place the dough in an oven preheated to 180 degrees C for 10 minutes.
5. Prepare a pizza!
Spread tomato sauce on the baked millet bottom. Put vegetables and fried slices of tofu.
The whole can be sprinkle with spices, I added some freshly ground pepper.
Put the pizza in the oven preheated to 180 °C for 15-20 minutes (or shorter, let's see if tofu does not burn;))
After baking, decorate with fresh basil leaves.
