This is a recipe from my (Indian) wife and is the best!
Ingredients
Serves 4
2 finely sliced Onions
100g gram flour
1 tsp garam masala
1 tsp ground cumin
1 tsp chilli powder (if spicy)
Pinch of turmeric
Some coriander
2 pinch baking powder
Salt to taste
OIl for deep frying
Method
- Add the onion slices in a bowl
- Add the garam masala, ground cumin, chilli powder, turmeric, baking powder and salt and stir well.
- Add gram flour in a bowl.
- Add water slowly to bind the mixture. Ensure the mixture is thick and doesn't contain too much liquid. If required add some more gram flour.
- Heat the oil in a deep frying pan over a medium heat.
*When oil is hot, start adding medium spoonful of the bhaji mixture using a spoon and fry until golden-brown. If oil is hot enough in few seconds the bhajis will float on the top - Then turn the bhaji over and fry for a further 50 seconds, until golden-brown all over.
- Remove and drain on kitchen paper.
- Repeat with the remaining bhaji mixture
Onion bhajis taste good with mint sauce, but do try with Salad cream for easy dip!
