Hi! I'm a lover of all things cranberry and wanted to share a holiday recipe with you that's sure to convert cranberry haters everywhere! Cranberry Walnut Pie
What you'll need:
Pie shell ( handmade, Graham cracker or a roll out dough is fine)
One pkg or about 12oz of cranberries, washed and mostly dry
6oz walnuts, preferably chopped
1/2 c brown sugar
1/2 stick butter
1/4 c margarine (or 1/2) stick
1/4 c white granulated sugar
1 egg
1/3 c flour
Prepare your lower crust as desired. Add whole cranberries to shell. Add 1/4 cup brown sugar on top of the berries and then follow with the walnuts. In a separate bowl, melt the butter and margarine and add the egg. Mix well and add brown sugar, white sugar and flour. Cinnamon too, if you're adventurous and pour slowly over the top of the pie allowing the mixture to flow into the cracks between the dry ingredients. Make sure to cover as much of the top as possible.
Bake at 350F for about thirty to forty minutes and allow time to cool on a rack for about ten to fifteen.
