I want to introduce you two ways of roasting meat. I am on a diet these days and exploring best ways to roast the beef. Of course I chose beef without excess fats, like a fillet.
This is a pan with waves specially made to roast food. I prepare my meat with a little bit of garlic olive oil (1/2 tbsp), salt and pepper.
Put the pan on the heat and let it get hot on high fire. After 3-4’, reduce the fire and place the meat on the pan for a couple of minutes until you observe the bottom getting a light brown colour. Turn it from the other side. Continue roasting it. Throughout the roasting I turned it 5-6 times; the timing and the flipping depends on your taste regarding how you want it cooked (rare - medium rare – well done). In order to discover the maturity of the roasting, you squeeze lightly the meat and see if there is any blood coming out. I eat my meat well done, that is why I let it roast approximately 15-20’ in medium to law fire.
Once you take it off the fire, you let the meat rest for 5-7’ near the fire inside the pan so that it is warm and in parallel its fluids are released.
You may serve with a sauce made of: mustard – ketchup – soya sauce. Also, on the side you may add fresh pepper and kosher salt.
