and my babies a good treat.
Edikainkon is an efik traditional meal.
Ingredients for Edikang Ikong Soup are;
Pumpkin leaves, Water leaves (Talinum Triangulare), Beef, Kanda(pomo), pepper, periwinkle, crayfish, palm oil, onions, salt, stock cubes and Dry fish.
How to prepare:
Boil meat till it is tender(season with stock cubes of your choice, add onions). Add a generous amount of palm oil, cube or diced Kanda (pomo), crayfish, dry fish and pepper and leave to boil for about 10 minutes. ...Add the periwinkle and water leaves and leave to cook for another 3 minutes. Add the pumpkin leaves and salt to taste. ...Thats it!
Use swallow of your choice. I chose semovita.
Add water in a bowl, add semovita and stir
Pour into little quatity of boiling water and stir. Cover the pot and allow to cook for about five minutes. Bring it down, add dry semovita to the mixture and stir. Return to cook for a while, bring it down and stir again to ensure it's properly cooked.
