Today a hi from the other side, I am in Sweden and currently visiting my family in Stockholm!
I didn't celebrate Valentine's day at all but had a great family time today. I don't mind to not celebrate Valentine's day because isn't that's what all days are about? To love and to show it to the people you really love? I can tell you that we celebrate love a lot in my small family at home!πJust saying it. And even if I couldn't bake something special today (Because it isn't my kitchenπ), I have this simple and sweet cheesecake recipe to share with you today. I made them a while ago and wish I could enjoy one or two of them right now as they are the most delicate cheesecakes you can have when you are enjoying some valuable selflove time!ππ
This is the easiest cheesecake recipe you can imagine, takes only minutes to prepare and if you use small molds they are ready within a hour!
CHEESECAKE HEARTS FOR YOU AND SOMEONE YOU LOVE!
RECIPE
- 1 cup soaked cashew nuts (at least 8 hours.)
- 100 g melted virgin coconut oil
- 70 g apple syrup (or maple syrup)
- 150 g coconut milk
- Zest from one organic lemon
- 100 g raspberries or strawberries (defrosted)
Directions:
- Blend everything for some minutes until the cream is soft-icecream-smooth. Have patience because it takes a while.
- If you want you can put one part of the cream in a bowl and set aside and blend some more berries with the cream in the blender. But it is not necessary.
- Fill the cream in small silicon molds,
- top with cacao nibs and
- freeze for 1 hour.
- Enjoy!
Ps. Storage in the freezer or fridge.π
