I drew you in with the butter ! ...right ?
Night before last my Mom came by and brought me some fresh tomatoes and corn. She did not plant any this year as it has gotten a bit too much of a chore for her at 88 years old. Don't get me wrong, she's a spry one, but it has finally come time to let that go. It's too much for ME in the heat and I'm only 65 ! (only 65 ha ha) It just so happened though, that she saw some men selling fresh produce out of their truck at a local park. She stopped and when she saw it was some of our family's favorites, she bought a bunch and then spread it all around. You HAVE to love that, you just HAVE too !
These are my two favorite things in summer and when they start to come in good, I eat all I can while they are fresh, because they are gone WAY too fast.
The first night, after she left, I had to go to Dollar General and buy a loaf of white bread. LOL... that is the only way to make them taste like they did many years ago when I first started loving them. Not only does it have to be white bread, it has to be Duke's mayo on both sides. Don't even try using something else around here unless you want to be run out on a rail ! LOL .... and of course a generous amount of salt.
What is wrong with that tomato you may ask. Nothing !.... that's what ! It's a Cherokee Purple tomato and it's supposed to look like that. I have to say my all time favorite of course is the German Johnson tomato, but a few years back, some wonderful people have made a comeback with the Heirloom seeds and now..... if they are available, I will choose the purples first. There are a couple here that are called a black somethingorother, my Mom couldn't remember, but they talked her into buying a couple for us to try, so soon I will. I think they may be the Black Krim.
Today and yesterday, I had a fresh summer tomato sandwich for lunch and they are SO yummy !
For supper last night and tonight I ate some corn. I like eating it off the cob and it is so simple to cook.
First you put some water on to boil. The size of the pot you use depends on how many ears of corn you are cooking. You want there to be enough water to cover them and although they will float, the movement of the boiling water will make them twirl a bit and they will cook even.
Once the water comes to a rolling boil, you put your ears of corn in. Then you watch them till the water starts to boil again (it won't take long) and when it does, you tell Alexa to start a 7 minute timer 😆... or set whatever timer you have, but remember, 7 minutes, no more, no less.
tick,tock,tick,tock,tick,tock.....
While they are boiling, you melt a generous amount of butter. (that's the rules !! ha ha).... My favorite butter is Kerrygold, but you can use whatever butter or margerine you love best (or have on hand). I melt mine in the microwave, but you can do it in a small pan on the stove or however you choose.
Then you get out your corn dish and corn handles. I know, we were spoiled like that as children and the lack of them would not stop me from eating the corn, but since they are here, why not? My corn dish was not broken last night when I used it, but tonight it was ! I guess I will be forced to buy some new ones.
😄 ME... being FORCED to BUY !!
That won't take much arm twisting.
Alright, this next animation is simply for comedy purposes and shows they simply all don't come out great. Picture me, holding my phone in my left hand and trying to hold the shutter button down with my index knuckle, while trying to do something coordinated with my right hand. It was much more difficult than it looked ha ha.... and this is what I got out of it. It's a wonder I didn't drop my phone into the pot.
So after your 7 minute timer goes off, you take the ears out of the pot and put them in a bowl ... .or something. This glass loaf dish belonged to my Grandmother, so I never use it without thinking of her. happy sigh..... and it worked perfect for my 4 ears.
Then gather your corn, butter, dish (or plate, the corn doesn't mind which one you use)....and your corn handles...LOL.... and get ready to chow down !
Normally if I eat corn on the cob with a meal I don't eat 4 ears, but since corn WAS the meal, 4 was just perfect.
That's my story and I'm sticking to it
