Ingredients:
1lb of fresh sea scallops
1 box of Super Greens Rotini
1 bundle of Asparagus
2 teaspoons of butter
2 gloves of minced garlic
2- 5 ounce cans evaporated milk
4 tablespoons of cream cheese
4 tablespoons finely shredded Parmesan Cheese
2 table spoons of Lemon Juice
1 teaspoon pepper
Of course before starting to cook we must toast with a glass of Moscato 🥂
Rinse Scallops; pat dry with paper towel. Set aside.
Cook pasta according to package directions, adding Asparagus for the last 3 minutes of cooking time.
Drain and keep warm.
Toast of Moscato 😍
In a large skillet melt butter over medium high heat. Turn heat to low.
Add scallops and garlic. Cook for 4-5 minutes or until scallops are golden brown; turning once.
Remove scallops from the skillet and put them with the pasta mixture to keep warm.
Whisk evaporated milk into skillet on medium low heat. Add cheese cheese, Parmesan cheese, lemon juice and pepper.
Cook and stir until heated through and cheeses are melted.
Add to cooked pasta mixture.
Now sit back and enjoy it with another glass of Moscato ;) ❤️
