INGREDIENTS
1 ½ pound of white fresh fish fillets of the best quality.
1 Red onion, cut into thin slices.
1 White onion, cut into thin slices.
Coriander finely chopped to taste.
1 Red sweet pepper, cut into thin slices.
½ Red spicy pepper, cut into thin slices.
1 Yellow pepper, cut into thin slices. (for the spicy ceviche)
1 Passion Fruit. (for the tropical ceviche)
Salt and pepper to taste.

It really was a challenge to make this post because I live in Venezuela, a country in dictatorship and economic deprivations that make life difficult. In fact, much of the ceviche made for this competition was donated to the least favored of my country. I hope you liked it.
