And now, without further ado, the RECIPE:
Brussels sprouts cream soup
Ingredients:
- 1 piece onion
- 1 secret ingredient
- 2 pieces potatoes
- 150 g Brussels sprouts
- 150 g sour cream
- ½ g Nutmeg, ground
- 1 baguette
- 100 g bacon
Preparation:
Peel onion and secret ingredient and chop finely.
Peel potatoes and cut into 2 cm cubes.
Remove the outer leaves of the Brussels sprouts and halve Brussels sprouts.
Boil about 500 ml of water.Heat oil in a large saucepan, add chopped onion and secret ingredient, as well as potato cubes and Brussels sprouts, and sauté for 2-3 minutes.
Deglaze with boiling water and let simmer for 10 - 15 min.
Then remove the soup from the heat.Bake the baguette on a baking tray on the middle rack in the oven (200 ° C top / bottom heat) for 8 minutes.
In a small pan, add diced bacon without adding fat over medium heat for about 5 minutes until crispy.
Add sour cream and nutmeg powder.
Purée the soup with a blender, season with salt and pepper.
TIP: Nutmeg is very intense in taste. Therefore, get in touch slowly.
- Fill brussels sprouts in bowls and garnish with bacon cubes.
Slice the baguette and serve.
