Happy Monday my Fruits and Veggie foodies!
My goodness I have been away for a few weeks, so busy making Christmas gifts and goodies but today I wanted to share a little Christmas Cheer with my friends of the Fruits and Veggies Community!

As I mentioned I have busy in the kitchen making healthy goodies to give to friends and neighbors. I love making healthy sweets, my friends are always so surprised! Today I am making the final treat using Cranberries! They're so good for you, I try to keep some in the freezer. They're great in salads, breads, juices and smoothies! Tomorrow I begin making up the plates of healthy candies and confections.
I’d better get started! Christmas is just around the corner!
The Bird’s Christmas Cranberry Cheesecake
Cranberry Topping
- Fresh Cranberries (1 1/2 cups)
- Fresh Orange Juice (1/3 cup)
- Filtered water) 1/3 cup)
- Organic Maple Syrup (1/4 cup)
- Cinnamon (1 tsp)
- Allspice (1/4 tsp)
I washed and drained the cranberries and juiced the orange. Luckily I was just making my morning juice so juicing this orange was simple! Place all of the ingredients in a saucepan and cook over medium heat. Stir frequently, cooking for about 15 minutes. Set aside to cool!
Cheesecake Crust
- Walnuts (1/2 cup)
- Hazelnuts (1/2 cup)
- Organic Maple Syrup (1 tbsp.)
- Coconut Oil (2 tbsp.)
- Medjool Dates (qty 6)
- Cinnamon (1 tsp)
Time to pull out good old Walter, my food processor. Trusty appliance he is, 40 years old this Christmas and still kickin! Pulse the walnuts and hazelnuts a bit and then add the balance of the crust ingredients. Pulse away until everything forms a ball. I used my spring form pan for this but a parchment lined baking dish works too! Press the mixture firmly into your pan of choice!
Cheesy cake filling!
- Raw Cashews (soaked overnight/drained) (2 cups)
- Coconut Oil (1/4 cup)
- Full fat Coconut Milk (1/2 cup)
- Organic Maple Syrup (1/3 cup)
- Fresh Lemon Juice (2 tbsp.)
- Vanilla (1 tbsp.)
Don’t put away that food processor! Pour the cashews in and process along with all of the ingredients until everything is as smooth as silk! Creamy you want! Pour the filling over the crust. You can place this in the freezer until the cranberries cool.
Now top with the cranberries, Place in the freezer for about an hour!
Voila! Christmas Cheer!
