There is always that time when there isn't that much food in your fridge or pantry just before going on a trip, but you need to use up what you have.
I don't like throwing away stuff, so here is a quick inspiration in case someone else is finding themselves in a similar dilemma and have no idea what to cook with only very few ingredients.
Also, as it was the lunch break it had to be quick and yummy.
Here goes something delicious for 2 people.
What you need
- 3-4 carrots
- a bunch of fresh sage leaves
- spring onion (depending on size, 2-3)
- olive oil
- 1/2 veg stock cube
- some hot water
- pasta for 2
- salt & pepper
How to make it
Start by boiling the pasta. By the time they're done, the veggies are ready too.
Chop the carrots and add them to a heated pan with hot olive oil. Fry to a few minutes on medium heat, adding salt.
Add the sage into the mix (wash and chop it roughly) and fry until you are done cutting your spring onions. Then add the spring onions.
After about 2 minutes, add the veg stock cube and hot water and let it simmer away. At this point, the pasta should be done. Ladle out the pasta and add it to the pan with the vegetables.
Mix it well, add some salt and pepper if needed and serve.
