The Beautiful Yacon
During last year’s gardening season, I fell in love with the Yacon plant.
Yacon, also known as Peruvian Ground Apple is a beautiful big plant with edible tubers that taste like apple.
The plant is related to both the Jerusalem Artichoke and the sunflower. If the season is long enough, the giant plant blooms and very tiny, yellow flowers appear at the top of the giant plant.
Keeping The Cuttings Alive
Just before I harvested the edible tubers, I took 21 cuttings and put them inside to help them survive the winter.
I also stored the main roots of the Yacon in a frost-free place, so I would be able to plant them out in spring.
The cuttings were a little extra.
Keeping them alive wasn’t as easy as I thought it would be. One by one, they died on me - they all got infected by some kind of fungus.
The One Survivor
The little plant above is the only survivor. He made it, but it was a close call. I can’t wait to see him grow up to become a huge, beautiful plant again...
