It is a lovely day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
We made a delicious feast for our full time volunteers today on our indoor wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen. We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!
Today we made a Mexican fiesta feast!
We made a fantastic spread with salad, spicy meat and veggie fillings, rice, beans, garnishes, condiments, and a selection of wraps for making tacos, burritos, or quesadillas!
Mexican spreads like these are awesome for a crowd, because each person can mix exactly as much of each element they like to make a completely unique dinner to their particular tastes and preferences!
We started with a delicious garden salad. We laid a bed of greens and topped it with juicy tomatoes, cabbage, peppers, sliced mushrooms, and nutritional yeast. This was excellent on its own, as a base for taco salad, or as a garnish in our burritos!
Sliced peppers, cheese, onions, and a variety of salsas are classic toppings for many Tex-Mex dishes.
We made a bowl of brown rice flavored with lime and onion, and served it alongside flavorful black beans prepared with onions, tomatoes, garlic, chili powder, and cumin. Rice and beans are a classic pairing across many cultures. It is said that eating these two together provides the body with all the amino acids it needs to build complete proteins.
For wraps, we offered whole wheat and corn tortillas as well as crunchy cabbage leaves! Tortillas are tasty flatbreads that serve as the traditional wraps for burritos and soft tacos, but sometimes we like to mix it up with a low carb option like cabbage leaves. You get a little extra texture, flavor, and higher nutritional content!
We offered 3 different delicious salsas: a classic red tomato sauce with lots of garlic, cilantro and lime juice, a spicy green chile salsa, and a deep smokey roasted tomatillo salsa! A spoonful of any or all of these yummy salsas can change the whole flavor profile of anything it is sprinkled on.
For our meat eaters, we offered seasoned chicken breast strips cooked in coconut oil with cumin, chili powder, garlic, oregano, and salt.
We offered shredded cheese and fermented, pickled relish as extra toppings too. The relish is sour, a bit spicy, and slightly crunchy slices of radish, carrots, onions, and cabbage.
We made a bowl of seasoned, sautéed veggies too with mushrooms, onions, peppers, and garlic in tomatoes and spices.
With all these options, everyone could build their perfect plate!
This one has a tiny taco salad topped with chicken, a veggie taco with salsa and sour cream in a corn tortilla, a cabbage wrap, black beans on rice, and a bit of veggie relish too.
Because the wood burning stove is nice and hot, we could easily make quesadillas by layering cheese, meat, and or veggies on a toasty tortilla!
Ahhhh it was another delicious, sustainable, nutritious feast with more than enough food for everyone!
Food is important, and we hope to inspire people to really take time to eat, enjoy it, and share it with someone you love. We also hope to inspire more and more sustainable practices in regards to food!
We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!
