How is everyone doing this week? I hope you are all well. It is well into harvest season for us here on the homestead and we have been getting more and more from our garden. In all the years that we have put out a garden, there has been one vegetable that we have never had much luck growing.
That vegetable is carrots. For some reason, they never have done well or grew bigger than a very small baby carrot. Two of our guesses were poor soil and, when it gets in the summer months, our dirt gets very hard. With the second option, we think it could be difficult for the carrots to grow. So we thought we would change it up and it has made all the difference.
As some of you know, we made a raised beds out of some logs from our woods and filled it with some great material. Peat moss, dirt, and natural fertilizers just to name a few things. It has kept the soil extremely loose and has been doing much better than expected.
So the other day, we pulled up our first few carrots and hoped for the best. As I mentioned earlier, we were not expecting anything more than a few baby carrots, but we were pleasantly surprised. These were much larger and they tasted delicious. The three varieties we planted were Cosmic Purple carrots and Nantes carrots. They were so that we cleaned out some of the raised bed and planted several little rows. We are hoping that they will be able to get some size before winter comes, so that we can preserve some for the winter.
