After many years apart since our school days, my friend called me one day and invited me over. I was happy to see him again, and he warmly welcomed me, saying he had really missed meāespecially my cooking.
We spent time talking and catching up on old memories, laughing like nothing had changed. Before leaving, I decided to cook for him. So we went to the market together to buy the ingredients.
It was a simple moment, but it brought back our strong friendship and reminded us of the good old days.
Stewed &Chicken
Ingredients: Chicken, onions, pepper, tomatoes, garlic, ginger, seasoning cubes, salt, vegetable oil
Steps: Wash the chicken thoroughly and season with salt, seasoning cubes, onions, garlic, and ginger. Allow it to marinate for about 30 minutes. Place in a pot and cook until tender, adding a little water if needed.
Once cooked, fry the chicken for a golden look.
For the stew, blend tomatoes, pepper, and onions. Heat vegetable oil in a pot, pour in the blended mixture, and fry until it thickens and the oil rises to the top. Add seasoning cubes, salt, and a little chicken stock. Finally, add the fried chicken and allow it to simmer for 10 minutes so the flavors blend well.
Egusi Soup with Vegetables
Ingredients: Egusi (melon seeds), palm oil, bitterleaf or spinach, stockfish, dry fish, pepper, onions, seasoning cubes, crayfish
Steps: Blend or grind the egusi seeds. In a pot, heat palm oil and add chopped onions. Mix the egusi with a little water to form a paste, then add into the oil. Fry gently while stirring to avoid burning.
Add blended pepper, crayfish, and seasoning. Pour in some water or stock and allow it to cook. Add washed stockfish and dry fish. Let it simmer until the egusi is well cooked and slightly thick.
Finally, add your vegetables
stir, and allow it to cook for about 3ā5 minutes. Taste and adjust seasoning if needed.
Semovita (Swallow)
Ingredients: Semovita flour, water
Steps: Boil water in a pot. Once it starts boiling, reduce the heat and gradually add semovita while stirring continuously to avoid lumps. Keep stirring until it becomes thick and smooth.
Turn the semovita with a wooden spoon until it is well cooked and stretchy. Add a little hot water if it becomes too thick, then cover for about 2 minutes.
Serving
Serve the hot semovita with egusi soup and a portion of stewed chicken on the side. This meal is rich, nutritious, and perfect for enjoyment.
