As a woman, being knowledgeable and skillful in terms of cooking is a MUST.
In my own opinion, it's kinda shameful to be unwilling and to not have background on how to do this certain task. Why? For me, in order to be independent, an individual should know how to prepare foods. Yes, that's the stepping point to attain independency.
I, as a lady, personally knows on how to cook. However, I do not always prepare foods for our family. Oftentimes, it's only for myself. Why? I ain't that confident with my masterpiece because of my taste buds. More often, my dishes are unsalted (matabang) because I am really conscious to salty and sweet contents.
But today, I boosted up my confidence to prepare this dish. For the very first time!
In this blog, join me as I prepare one of the Filipinos' most favorite dish. None other than "chicken liver and gizzard adobo!"
" ... In our country (Philippines), we referred to it as adobong atay at balun-balunan. It is a traditional Filipino cuisine primarily made up of chicken liver and gizzard and is sauteed to onion, garlic and ginger. Then, boiled with soy sauce, vinegar and water. Mixed with spices and preferred vegetables."
Here are the detailed ingredients that can be used:
- Chiken offal: liver, heart and gizzard.
- For sauteing: oil, chopped onions, crushed garlic and sliced ginger.
- As flavorings: soy sauce, vinegar and water.
- As seasonings: salt (optional), bay leaves, spices like pepper and chilli.
- Vegetables: potatoes, etcetera.
Now, let's proceed to the procedures:
- First, heat oil in a pan then sautee onion, garlic and ginger in hot oil. Variety of oil to be used depends on the preference, availability and accessibility.
Remember to sautee the ginger first before onion and garlic. It is to prevent the last two ingredients to be easily burnt.
Once ginger became golden-brown, drop onion and garlic in the pan and sauteed until golden-brown. Avoid to burn these three to minimize burnt-like taste which will destroy the original taste of the dish.
- Next, put the chicken offals to the pan together with onion, garlic and ginger.
Sauteed the offals until the texture became mildly crispy and tender. Or until it changes its color to brown and became dry. Continuously stir the mixed ingredients.
- Afterwards, add an adequate amount of soy sauce.The amount of the soy sauce depends on the cook's preference.
Stir up for around two (2) minutes. Then, let it simmer for 5-minutes until the offal digest the soy sauce.
- Fourth step, add water and potatoes. You can also add other vegetables (preferably, root crops). Then, stir and let it boil.
- For the final touch, add spices like pepper and chilli. Check seasonings and adjust according to the preferred taste. Stir for a few minutes and let it boil until the sauce thickens and nearly dry.
FINALLY, here's our masterpiece. Remove the pan from heat then transfer the dish to a serving bowl. It is best served with steamed rice. Happy eating! 🍽️
