How are you right now?Me,I'm a bit not okay today,my asthma strikes again but still I have to do my duty as a mother..Today's menu I want to share to you is my special fish stew simmered with a lot of tomatoes and besides from that I'm also using for the first time,my favorite natural cane vinegar..
I cooked this as our lunch for today because my mother and kids requested another menu that's low budget yet a satisfying dish..What I loved the most was I used my favorite fish(sapsap here in our place)which made the recipe more savory..
First things first,of course you have to clean the fish,removed it's scales and etc..
Here are the list of ingredients to be used to come up with a better taste fish stew
1/4 kilo of sapsap fish
2 tbsp of oil
1 large onion (diced)
2 garlic cloves (minced)
1 large sized of tomatoes (chopped)
1 stalk of spring onions( chopped)
3 tbsp of cane vinegar
1/4 cup of water
Salt and pepper to taste
This is the cane vinegar I'm using..it add more flavor to the fish and adds more aroma to the fish..
After all the ingredients are being prepared in a pan sauté all the aromatics such as garlic,onion,spring onion stalks and tomatoes..
After you sauté all the aromatics,gently add all the sapsap fish..Pour in the cane vinegar and a 1/4 cup of water..
Bring it to a gentle boil..Cover it and simmer for 15-20 minutes and let the flavors meld..
Check if the fish is cooked and avoid to much stirring to prevent the flakes from breaking..Taste it and you can always adjust the salty and sour taste of it..
Serve and prepare this in a plate..Serve with a hot plain rice 🍚 🍚..
