I wanted to share one of my kids' favorites this Easter Day-- This Crunchy Vegetables Spring Rolls stuffed with Carrots and beans..
What's different with these spring rolls was that I used a lot of carrots and beans as fillings of it..to begin with I will share to you here the ingredients I've used
Ingredients:
2 pieces large sized carrots
1/4 kilo of Baguio beans π«π«
2 pieces of onions
1 clove garlic
1 sized cabbage (optional)
1 red bell pepper
Salt and pepper to taste
Oil for sauteeing
Lumpia wrapper (unsalted)
Today has a reason to celebrate for He is alive! So I prepared something special for my kids and for my whole family..this is just a simple recipe but I find this delicious and a healthy treats for them because this is stuffed with a lot of veggies inside..
Here are the instructions:
First is to clean the vegetables.Peeled,washed the vegetables properly..
For the carrots and chayote (sayote) I preferred to have it grated so that kids will surely like it and eat of it..
After how many minutes of grating it..prepare all the other ingredients for the cooking/sautΓ©ing of the vegetables..
So in a pan, add a little amount of oil..Start sauteeing the garlic,onion,and the bell pepper..wait for a few seconds until the aroma comes out of it.. alternately add the carrots and Baguio beans..
Start adding seasonings like salt and pepper,broth cubes and simmer for atleast 3 minutes or until vegetables are cooked..
Once it's cooked,placed the vegetables in a drainer/strainer to remove excess water..
Prepare the vegetable wrapper and a piece of egg ..
Once the vegetable fillings cooled and drained start wrapping it..
Begin by pouring a little amount of vegetables stuffed in a wrapper..
After rolling it sealed it each side using the egg whites..I made 50 pieces of spring rolls..
Start deep frying each spring rolls..to achieve crispness and crunchy spring rolls make it sure that oil is hot before deep frying it...
Once it's cooked drained it to remove excess oil or have a tissue paper lined in a plate..
Served hot and pair it with a little sweet banana ketchup
