Omelets are a flexible food that fits any time of the day.
I had planned to have it for lunch, but it turned into dinner because we had another meal at lunchtime.
I teamed it up with kangkong (water spinach) to create a dish that's both healthy and delicious!
Ingredients:
• 2 eggs
• 1 cup kangkong leaves
• 1/2 cup onion
• salt and pepper to taste
• 1 tbsp oil
Preparation:
I started by heating a little oil in a pan, adding chopped onions, and sautéing them until they became soft. Next, I tossed in the fresh kangkong leaves.
Meanwhile, I whisked eggs in a bowl, seasoned them with a pinch of salt and pepper for taste.
Then I poured it into a pan, allowing it to spread evenly.
I then added the cooked kangkong on top of the eggs.
After that, I gently fold the omelet.
I also squeeze some ketchup on top of it, which adds color and a hint of sweetness to enhance the flavor.
And when I sliced it, I was so happy because it was a complete success.
