When we eat sugar, our brains release dopamine, a neurotransmitter that creates a "feel good" response. This can lead to an emotional or psychological dependence on sugar, which is known as sugar addiction. When people crave for Sugar, they look out for either chocolate, or sweets. But in my case, the craving ends up with home made dishes. Especially the Halwa.
Home-cooked food are always healthier, more flavorful, and cheaper than food from restaurants or other sources. My family alwsys avoid outside food and hence most of the time were made at home. On a rainy afternoon, I was craving to eat something sugary and ended up in making besan ka halwa.
Home cooked food are alwsys healthy, full of nutrients, high on quality as it is made with love and very cost effective, and convenient. There are many dishes which can be easily made with home made ingredients. So does Halwa.
Besan Halwa means a sweet dish made from besan i.e gram flour. Besan ka halwa is a rich, indulgent Indian sweet made with gram flour, ghee, sugar and cardamom powder and dry fruits. There were many similar item available in market, beaan ke laddo or barfi being common name. But halwa is made with plenty of stirring. In my case I prepaired this dish for my self, so I made use of
1/2 cup of besan I.e finely ground hulled black chickpeas.
2 tablespoon ghee
1/2 cup of milk.
Sugar to taste
one piece of cardamom.
fine chopped Almonds and raisin.
Both ghee and dry fruits give a rich flavor to this sweet. When we prepare any sweet with besan, the kitchen smells amazing with the nutty, sweet aroma of besan being roasted in ghee.
I let the Ghee to melt in a pan on a slow flame, and added besan onto it. The roasting is important to give a delicate flavour. So it requires a lot of stirring activity. I kept on stirring the besan on low light flame till it turn dark / brown.
When we start getting the aroma of roasted besan we add the cardamom. Start adding the milk, slowly and mixing it simultaneously.
Once the mixture is ready like a paste add the Chopped dry fruits. Our dish is ready to be served.
It is alwsys wonderful to savor thr taste of warm halwa on a cool weather. We make halwa of many other ingredients. Gajar / carrot ka halwa beingbquite famous during winter time. But these delicies always tempt us for more sweetness.
