Remember these? Last Saturday market's jar meal?
Because of the bad weather, the market was short of customers which is why my choice of offering has to either have a long shelf life or something we will not tire of enjoy eating...
This is how two of them turned into this week's meatfree Monday supper of yellow cauliflower and chickpea curry. Fragrant and spicy, served on a bed of leaves and basmati rice with some slivers of tomato and a squeeze of lemon.
It's versatile and can be eaten hot or cold which is why it works well as a jar meal.
For us, it was a cold evening so I set the greenery and onion aside and liberated the curry and warmed it while the rice was cooking.
Another recipe to add to the "must write up" list.
