I told you we had monster rocket (arugula) in the garden!
I experimented with flavour combinations for the salad. Again. I already know it works well with beetroot and this time added roasted cauliflower. The dressing was simple: salt and pepper, lemon juice and olive oil.
For a starter or a meal, I would either add blue, goat (chevin) or feta cheese. To make it vegan, salted nuts or marinated chickpeas.
Last night it went with a slow cooked mushroom, onion and thyme omelette.
A last word
This is a herb I have come to, kinda late and I thought Inwould check its benefits. Firstly, I didn't know it is cruciferous and that it is full of things not in other vegetables.
