It was a long day in the office, yesterday, and on a Thursday evening, I need to make the dough for Saturday's buns. They are best when the dough ferments all night, before being knocked down three more times before being bunned and baked.
So, I always plan an easy supper. I said, when we had the spinach dahl and Bombay potatoes the other night, the remains would go into a frittata or, savoury bake if you will.
So they did.
Not as much potato as I'd have preferred, but enough. The dahl was stirred into four beaten eggs and the mixture poured over the potatoes and baked in a moderate oven for 15 minutes before finishing it off under the grill.
This can be served hot or cold. With or without a salad, chutney or chilli jam. Last night, because of my non-existent energy level, there was no salad. The remains of the remains will make lunch today.
Of course, the day ended with a book and a kitty.
