It was another not salad supper evening, so Saturday's Moroccan lentil salad #inthejar became a bake.
Layered with brinjal from the garden, some sautéed onion and garlic combined with some tomato and harissa to top it and baked.
Served with bulgar wheat cooked with organic green stock from McGregor Herbs.
On the side, for those that wanted: tzatziki and more harissa.
I need to note what I did because it was a delicious combination of flavour and textures.
It would seem that summer's back. At least until Sunday. That makes me happy!
