This is how my day began: Rambo, not just on the bed, but contentedly resting on my leg. He remains a bit of a wonder even though he is very settled. He is very much a home body, not straying much beyond (if at all) our property.
Butternut are back in season and roasted, it is very versatile.
This plant-based meal is one of my favourite ways of using it. Even the carnivorous husband digs in with relish.
Roasted and then combined with a lentil, onion and harissa mix and finally with fresh tomato and chopped parsley and coriander.
Now in jars for the McGregor market this morning.
As I know folk will ask for the recipe, I shared it last season and you will find it here.
For some reason, today was all about harissa. I shall have to make more while the peppers are in season as this is the last jar: the others all sold.
Supper in bowls and more harissa. Left overs: chicken and couscous, jazzed up with peppers, onion and shredded baby spinach. Easy peasy and good after a long kitchen day.
