Mondays can be challenging because, well, they're Monday. I've been working hard on rearranging my head about that although it did niggle me a bit when I agreed to a morning online meeting with a client.
Yes, there was a slew of interruptions ahead of the appointment and last time we'd connected, we hadn't. South Africa was in the throes of stage 6 load shedding and even if you're not being loadsh*t, the power's off somewhere and it has a knock on effect on internet connectivity. This time, I was determined that all my tech would work.
Everything except the microphone worked. WTF?? I gave up. It turns out that they, too, were having Internet issues so we innovated. PC screens for sharing what we had to and our phones for the all important voice interaction.
The key takeways that turned my Monday from manic to magic:
- our client is over the moon with the work I've done and which will continue until at least December
- more work in a slightly different role: working with other writers to edit and coach them
- helping my client get their in-house documentation up to scratch
Four months into the relationship, I could not be happier, especially with the shift in role.
It did mean that I was late out of the office and hadn't really thought too much about supper except that it would be "veg" something.
I needed to fiddle in the kitchen - it's my unwinding space:
Meatfree Monday flour tortilla and bean chilli.
With cheese, tzatziki (instead of yoghurt) and extra chilli jam for The Husband. Oh, and lose all the dairy and you have an entirely plant-based meal.
I've been practising the tortilla and am getting them "righter".
Practise makes perfect, right?
Now they roll without much cracking and are lovely and soft and chewy.
Monday done and I'm really looking forward to new things!
Until next time, be well

If this post might seem familiar, it's because I'm doing two things:
- re-vamping old recipes. As I do this, I am adding them in a file format that you can download and print. If you download recipes, buy me a coffee. Or better yet, a glass of wine....?
- and "re-capturing" nearly two years' worth of posts.
- From Wordpress, I use the Exxp Wordpress plugin. If this rocks your socks, click here or on on the image below to sign up.
