As usual for most seasons, other than winter, last night's meatless Monday supper came out of the jar. This week, it was the raw, marinated courgettes. I served them on a bed of leaves and added a few extra heirloom cherry tomatoes and roasted pepper.
The remaining naan breads from last week were the final touch. I had frozen them and was a little anxious about reheating them. As they had already been brushed with butter, I just warmed them in a dry pan. I am thrilled to say that it worked. They returned to the lovely, soft, chewy texture of last week.
I am so going to make more and hope that I can continue to get them so right!

I'm glad you asked. You know I've been talking a lot about hurry-up-and-wait-mode? Now, it seems, I'm not waiting because the clients are suddenly, themselves, in hurry-up-mode. Well, guess what? There's only one of li'l ole me and because of next week's market and a few other confirmed activities next, and the following week, there's even less of me. So, I have to get it all done between now and the close of business on Thursday. Or not at all. I cannot to more.
