Last night was my second effort at making pita breads. Again, I made a full batch of dough but only four pitas. The other half of the dough is in the fridge for another meal.
Our Monday meatless meal was one of my favourites (The Husband not so much ππ). The heroes were my market pal Trish's falafel (which, truth be told, is what The Husband says he'd prefer not eating) and tzatziki with my hummus and fresh tomato, cucumber and onion. We had run out of lettuce...
For it to have been entirely plant-based, I should have forgotten the tzatziki.
Back to the pitas. I am learning that less is more. They really do cook quickly. Three minutes in the oven is all it takes. There's one left for my Wednesday lunch when The Husband is usually out and I am flying solo.
Perhaps, depending on how things go, I'll share my solo Wednesday lunch...on Thursday...
