Another day prepping meals for the freezer. Hubby loves his Pancakes, French Toast, or Waffles on the days he decides not to have the breakfast casserole.
I made a very large batch of buttermilk pancakes and let them cool on the baking rack.
Since I was already in cooking mode, I whipped up a batch of cinnamon French toast with some powdered eggs I had in the pantry. They never look as good as when made from fresh eggs, but you can't tell the difference in the taste. Plus, I used honey wheat bread that I had on hand.
Once everything was cool, I layered all of them onto a large cookie sheet with parchment in between the layers. I froze them overnight and packaged them the following morning.
Tomorrow, I plan on making him a large batch of his favorite breakfast egg casserole. Between the three, that should keep hubby going through the month.
I still had a bit of energy left, so I made a batch of sandwich bread. Unfortunately, I tried a new recipe, and the bread dough was very stiff, and I had a bad feeling about it.
When it was cooked, the bread was super dense, not very good at all. That was very disappointing, so hubby had a few pieces of toast with it, then we cut it up and fed the rest to the crows. I didn't even take a photo, that's how bad it was, lol.
That was enough cooking for one morning. Mika and I took a very long break and enjoyed some porch time together.
After all, it is our favorite pastime, well, besides cooking.
