I did it, I made Gnocchi for the first time ever. I had some potato flakes sitting on the pantry shelf and decided to give it a go. I looked up recipes and they were all pretty much the same across the board.
Gnocchi
Combine:
1 cup potato flakes
1 cup boiling water
Stir to combine well and let cool.
Add:
1 cup all purpose flour
1 egg, beaten
1/2 tsp. salt
1/2 tsp. garlic powder
1 tsp. crushed dried basil
- Mix the potatoes into the flour and spices, add the beaten egg and mix to form the dough.
- Lightly flour your surface and take small amounts of dough forming them into long ropes. Cut the ropes into ¾ inch pieces, then slide each piece on a fork if desired. They don't look too perfect, but I will probably get better with the fork, lol.
Place the pieces onto a parchment lined tray to rest for 20 minutes before cooking. I left them on the counter for two hours before cooking and I had plenty left so I froze them to use for dinner another night.
Note, I had doubled this recipe just to have some to freeze. This recipe serves two people perfectly.
- Boil a large kettle of water and drop the Gnocchi's in. Once they float to the surface, it is time to strain them into a colander.
- Coat them with homemade tomato-basil sauce and serve immediately.
Serve with garlic bread and sprinkle on Romano Cheese and red pepper flakes. I could not believe how light the Gnocchi came out and they were so tasty that my husband said they were better than his Italian mother ever made. Wow! That was so unexpected as she was a fabulous cook.
