When you have so many vegetables from the garden you need to use them quickly. That summer night, I chopped everything up into bite-sized pieces and made a one-pan meal.
The last yellow summer squash had been picked and I had a large zucchini too. Of course, there were plenty of tomatoes on hand. I like making this meal during the summer months since it is quick and easy to make. That allows for more back-porch-sitting, you know I love porch time with Mika.
I cut up a few potatoes and pre-boiled them for about 12 minutes or so, just to get them slightly tender. The meat I used in this dish was a mixture of hot and sweet Italian sausage, which I removed from the casings. I added a few florets of broccoli, sprinkled with salt and pepper, and then drizzled it all with olive oil. Tossed it all together to coat all the pieces and baked it for 30 minutes at 375°F.
I then removed the pan from the oven to top the dish with shredded cheese, then baked it for another 15 minutes. That was fast and so easy to throw together. It is a great way to use vegetables when the garden is bursting with food.
Well, that is that, a one-pan meal and hardly any dishes to wash. After dinner can you guess where I was, you got it, back on the porch. It's wine time!
