This past Saturday marked the birthday of my husband’s cousin, as she added another year to her life. As is customary in our family, we were not only invited but also made sure to be present on this significant occasion, emphasizing our unwavering commitment to putting family first in our celebration.

Given the considerable distance between Pardo, Cebu City, and our location in Compostela, Cebu, we opted to set out from the house with an early start.

We were en route to Pardo, Cebu City with the sun still shining brightly. Notable, the occasion was an early dinner celebration.

We had arrived at our destination, which was in Pardo, Cebu City just across Mandaue Foam, the store that unfortunately experienced a fire last year.
Shortly thereafter, the festivities commenced with a prayer offered for the food we were about to intake. It was worth remembering that the parents of his cousin were the proprietors of Camilo’s Event and Catering Services, in other words, they owned the business.
And here are the delectable dishes that are absolutely mouthwatering and incredibly delicious.
Bam-I Special
Bam-I special. Bam-I, with its uncut noodles, symbolizes a wish for the celebrant to have a life filled with longevity, good health, and abundance. It's a tradition that represents our hopes for a bright and prosperous future for the birthday celebrant.
Their bam-i special was unique and delicious. The combination of sauteéd vegetables and succulent meat or seafood created a delightful culinary experience. Infused with the rich flavors of soy sauce, oyster sauce, and a medley of seasonings. Bam-I achieves a multi-layered and gratifying taste that truly captivates the senses and tantalizes the palate.
Pork Afritada
It is a Filipino stew known for its savory and comforting taste. The taste of their Pork Afritada can be described as a great blend of tender pork, simmered in a rich tomato-based sauce. The sauce was typically infused with various spices such as garlic, onions, bell peppers, and different seasonings, creating a flavorful and slightly tangy taste.
The vegetables contribute a touch of natural sweetness and a vibrant burst of color, while the tender pork soaks up and carries the delightful aromatic essence of the sauce.
Beef Steak with Onions
The taste of their beef steak with onions can be described as a great combination of tender beef and caramelized onions. The beef was marinated and cooked properly, resulting in a rich and meaty flavor profile.
Buffalo Wings
Their buffalo wings were a combination of savory, spicy, and tangy notes. Their chicken wings were typically deep-fried to achieve a crispy exterior, and coated in a zesty buffalo sauce. I liked it.
Shrimp Tempura with Hot and Spicy Sauce
Their shrimp tempura with hot and spicy sauce was also on great tone. The succulent shrimp was delicately coated in a light, crunchy batter, creating a delightful contrast in texture. When dipped in its sauce, it was hot and savory making it an irresistible treat for a person like me who likes to savor a delightful combination of crunch and spice in my seafood.
Lechon Belly
The lechon belly has been expertly carved into individual, mouthwatering slices, ready to be savored and enjoyed. The skin was crispy and crackling, offering a satisfying crunch while the meat beneath was incredibly tender and succulent.
Dessert – Mango Pandan
The taste of their Mango Pandan can be described as a harmonious fusion of sweet, tropical mango flavors with the scent of floral notes of pandan leaves. It was both fruity and aromatic, creating a cooling and delightful flavor that made me savor more of it.
Of course, the rice!
I thoroughly enjoyed the Bam-I special, Shrimp Tempura, and Lechon Belly – they were my top picks, and I couldn't resist indulging in them. The flavors were so enticing that they left me craving for more. Hahahaha! I was truly stuffed. Oh, I can’t believe I almost forgot to mention the dessert- mango pandan. It was one of my all-time favorites. I couldn’t resist having seconds, savoring it twice.
Our family relished the food as we engaged in meaningful conversations about life. Following that, we joined in singing a joyous birthday song to the honoree, and she gently extinguished the candle on her cake.
The birthday celebrant was the one who wore blue dress and blowing her cake.
After an hour of celebrating the birthday, we departed with satisfied appetites, carrying yet another collection of cherished birthday memories with my husband’s extended family.
