Instead of tossing out pineapple peels, I use them to make a naturally fizzy, slightly sweet drink. No fancy tools, just sugar, water, and a bit of time.
Pineapple peels carry wild yeast on their skin, which kickstarts the fermentation naturally, no need to add anything extra.
It ferments in a few days, costs basically nothing, and helps cut down on waste.
A homemade soda from scraps!
πΏ Pineapple Peel Fermented Fizzy Drink
π Ingredients:
Peels of 1 ripe organic pineapple
Β½ to ΒΎ cup brown sugar or raw cane sugar
6β7 cups filtered or boiled and cooled water
Optional:
1 small stick of cinnamon
2β3 cloves
π Instructions:
Wash the pineapple briefly before peeling.
Roughly chop the peels and core into smaller pieces.
Place the peels in a large glass jar or pitcher.
Add sugar, spices (if using), and water. Stir until sugar dissolves.
Then cover the jar loosely with a cloth or lid (not airtight) to allow gases to escape.
Leave it at room temperature (ideally around 21β27Β°C / 70β80Β°F) for 2 to 3 days, stirring once daily.
You'll see bubbles forming and smell a fruity, slightly yeasty aroma.
After 2β3 days, strain out the solids.
Pour the liquid into swing-top bottles or other quality bottles with tight lids to trap carbonation.
Second Ferment (for fizziness):
Leave the bottled drink at room temperature for 12β24 hours to build carbonation.
Then refrigerate to stop fermentation.
