This is the one!!!!
With all this isolation many people have been baking and boy is this cake banging I should really slow down on how much I eat this however it's addictive, I first tried banana cake many years ago as a child , however it disappeared out of my life. Last year went to a Caribbean shop and there it was. I tried it and it brought back so many memories the taste of the spongy soft texture the banana infusion the crispy edges. This is a personal favourite and the best things about it is you don't need to add to much sugar or even none at all to make it sweet.
You can mix this with ice cream I would if it came straight out the oven and was nice and warm my partner likes to add whip cream. Another alternative is custard nice and warm just how i like it, this is a healthier solution to many other cakes, you could also add banana's too just saying!!
What's the recipe?
Heat oven to 180C/160C fan/gas 4.
Butter a 2lb loaf tin and line the base and sides with baking parchment.
Cream 140g softened butter and 140g caster sugar until light and fluffy (OR USE STEVIA), then slowly add 2 beaten large eggs with a little of the 140g flour.
Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas but you could use 4 if you like
Pour into the tin and bake for about 30 mins until a skewer comes out clean.
Cool in the tin for 10 mins, then remove to a wire rack.
Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
Drizzle the icing across the top of the cake and decorate with a handful of banana chips.
Give it a try if you have kids they would love it that's if they like banana's.....
