This is Chicory (Cichorium intybus L.) whose photo I took near the road where I go to my weekend cottage.
Roasted and minced root of chicory has long been cultivated and used in Europe as a coffee substitute.
I also use Chicory mixed with barley as a coffee substitute.
Health benefits of using Chicory
