Inspired by this post @anggreklestari/unexpected-banana-cookies i decided to make up a recipe and cook some banana cookies.
I don't have an oven (yet - masonry cook-stove planned to be built soon) so used a pan.
Recipe (all ingredients approximate)
100 g flour (approx 60 g whole wheat & 40 g cornflour)
2 g Himalayan salt
3g baking soda
1 tablespoon chia seeds
20 g Demerara Sugar
Coconut/rice milk
Half a large banana finely chopped.
All ingredients (except milk) mixed together, then added enough milk to make a quite thick dough.
Rolled gently on a floured bread board, separated into cookie size peices and placed in a preheated pan with some olive oil. Lid added to the pan, on a low heat & cooked for approx 10 - 15 minutes, turning over a few times.
Total prep and cook time around 15 - 20 minutes.
Turned out more like Muffins than cookies, but super delicious :-)
Eating time - 10 minutes so far (with the other half of the banana lightly fried) - nearly half gone :-)
