Hello beautiful people of hive, how are you all doing today?
So today I decided to prepare egusi soup, and it's crazy how I can actually can cook now compare to me years back. I can still remember very well people telling my parents how my husband will be in a very big trouble since I wasn't doing anything. for as long as I can remember, there was actually a time I remember begging my mum to allow me do something, and do some stuff to help or she felt it wasn't necessary which clearly was not true.
Trust me when I tell you that I actually learnt how to cook when I left home to school
Not my first year in school, it was almost my last year in school I finally learnt how to cook, and as I type to you now, I am glad my parents have actually tested my food. they didn't trust me at first but got surprised at last. So without bugging you so much with my personal story, let's start with the steps I actually took preparing this soup.
As you can see from the images above you can already prepare this delicious soup on your own without any explanation
Let me still give an explanation, it may not be exactly 100% (percent) of what I did, because I didn't keep account but I'm going to explain the little way I can to best describe how I prepared this soup.
NOTE:
It is very important to note that there are many different ways in preparing this same soup, so don't get confused
These are all the ingredients used in preparing it
Dry fish
Pkumi
Cray fish
Ginger
Garlic
Onions
Fresh pepper/Dry Cameroon pepper
Red oil
Star mazi
Salt
vegetable
So the first thing I actually did was to par-boild my fresh fish and pkumu, adding some salt, pepper, mazi and onions. after boiling it, I brought it down and brought out an empty pot to fry the soup.
So in the process of preparing the soup, I put an empty pot, putting my red oil, letting it get very hot and then adding my onions, fried a little bit, and then add my fresh pepper and fresh ginger couple with my fresh garlic. turning them to fry well, and the adding the per-boild water. turning to mix well.
You don't have to add ginger or garlic, I just like them that's why you see them
After that I add the amount of water I want to have in the soup, and then I turn it and coverage for some minutes to boil, after waiting for few minutes and seeing that the soap is already boiling, I added my crayfish, my Magi and every other ingredients left to add except for my vegetable, because that one is going to be inside at the end of it all, not in the beginning or middle.
After adding every other ingredients except for my vegetable, I will test my soup to be sure it gives me the perfect taste I want, and if there is something lacking inside the soup which could only be either Magi or salt, and after adding whatever is lacking or if nothing is lacking then I leave it to get bored and when it gets to my satisfaction, I will add my vegetable, cover for few seconds or 1 minute, and boom we are done cooking.
For those that don't know about egusi soup, it is actually a Nigerian popular soup, you will find it in almost every part of Nigeria.
