For this blog I'll be sharing to you a recipe which is very common to Filipinos who came from a birthday party or any special celebration.
Why is that so? Well, part of our culture when coming from a special celebration, we usually wouldn't come home empty handed. Well, it's a matter of how close the frienship and how closely related are you to the host. 😆 Or it really is just the host's prerogative who'll get a share of food to bring home.
That is why we are always ready with our celpon (cellophane puno) and laptup (lapad na tupperware).
What does this means? This is a common joke and a source of laughter among invited guests. Celpon means we have to bring with us cellophane and laptup which means wide tupperware container where we can place the left over food after the party or celebration or if the host allows it, they can always decide to let us come home with cellophane and wide tupperware full of food.

Although, I didn't literally brought with me the celpon and laptup but it is the "bring home tradition that is being shown here.
Just a short background story...
My nephew celebrated his first birthday and we were invited to attend to the said party.
We attended the party to celebrate with them and share the joy of another wonderful year full of happiness and blessing with their little one. And of course, attending to the party means we can have a taste of delicious foods. Hahah!
Lechon, I must say is the star on the table in Filipino celebrations.
Now coming home from the party, is a celpon with the spaghetti and fried chicken and laptup with the lechon. I refrigerated the fried chicken and spaghetti and heated it the next day to eat while the lechon, well, I had a better idea to prolong its life. I decided to cook it into lechon paksiw. This is now the recipe that I am going to share with you.
LECHON PAKSIW
One way to prolong the life of left over lechon and turn it into another delicious food is cooking it into lechon paksiw.
It is so easy to cook it and the ingredients are readilly available.
Ingredients:
- chopped lechon
- 1/4 cup vinegar
- 2 cloves chopped garlic
- 2 small onion bulb, chopped
- dried pepper seeds
- dried pepper leaves
- salt
- sugar
- pork cubes (optional)
- 1 to 2 cups water
Procedure:
1.Place the chopped lechon in a cooking pot and add 1 to 2 cups of water. Heat and wait for it to boil.
2.When the mixture boils, add the onions, garlic, pepper and vinegar.
3.Let it boil for another 10 to 15 minutes so that the meat will become softer. The softer the meat, the tastier.
4.After a few minutes of boiling, add the salt, sugar, pork cubes (optional) for flavor. You can adjust the amount depending on your preferred tastes.
5.After adding the flavors, let it boil for few more minutes. Boiling it for a minumum of 30 minutes is good enough to make the meat softer.
After that, lechon paksiw is now ready to serve.
Come, lets eat!
This is perfect with rice. Surely, 1 cup of rice won't be enough for this delicious recipe. And if you cannot eat it all in one meal, this can last up to two more days. Just heat it before eating it for the next meal. The longer its life, the more delicious it gets. 😄
